Equatoria Coffee is a producer working to generate revenue for their local communities of Nzara and Yambio County via the production of teak and coffee. The areas have a history of cultivation which was destroyed during civil conflicts, so Equatoria are building upon this by providing farmers with training and seedlings to grow crops. Both areas are situated at low altitudes that are not preferable for Arabica cultivation, and Excelsa coffee has been genetically linked to wild growing coffee trees in South Sudan, therefore Equatoria have chosen to focus on this species due to its potential as a climate, pest and disease-resistant alternative.

This lot was fermented as whole cherries in sealed tanks for 48-64 hours before being pulped and dried. The anaerobic processing method combined with the unique species creates an unusual, complex flavour profile, primarily featuring savoury notes of cedar, malt and walnut, with a distinctive fruity and honey-like undertone and a floral aftertaste of chamomile.
